Jorg Lippuner

General Manager

Swiss born and educated, General Manager Jorg Lippuner came to Boar's Head Inn from Meadowood Resort in California's Napa Valley. During his tenure as managing director at Meadowood, he positioned it as one of Condé Nast Traveler's top 20 U.S. resorts. Andrew Harper's Hideaway Report also ranks Meadowood among its top 20.

In 1989, Lippuner opened and, over four years, successfully positioned the Swissôtel Atlanta in Buckhead against prominent competitors such as the Ritz-Carlton and Nikko hotels.

While managing director of the Grand Bay Hotel in Miami he achieved a Mobil Five-Star rating for that property, an experience he enjoyed as much for the distinction it brought the hotel as the reward it represented for the hotel's team. "I still relish the memory of the happy faces I saw when the announcement was made," Lippuner says. Further distinctions include a AAA Five Diamond award at the former Westin Bonaventure Hotel in Montreal.

Jorg Lippuner has enjoyed a distinguished career in the hospitality industry. He has worked on three continents and is fluent in four languages.

Kevin Blake

Assistant General Manager

Boar's Head Inn's Assistant General Manager, Kevin Blake has built his career around a personal philosophy that “loyal guests are more valuable than satisfied ones.” His ascension through the ranks of restaurants and topnotch resorts in northern Virginia, Maryland and Washington, D.C. is a testament to the wisdom of his words. At Boar's Head Inn, he said, “I believe in creating memories for our guests. Memories create loyalty. The loyal guest is committed to the property and will return again and again.”

First working in Falls Church and Vienna as a professional Chef, Blake developed skills “working [with food] within the season and the region” to land a prestigious position as Chef Garde Manger at the Congressional Country Club in Bethesda, MD. From there, he became Executive Sous Chef at ANA Hotels, International, in Washington, D.C. Promoted to Executive Chef in 1997, he was hired by Destination Hotels and Resorts in 1998 for D.C.'s Four-Diamond luxury property, The Monarch Hotel. He stayed for five years, spending the last one as Director of Food and Beverage. In this position he supervised a staff of over 120 and was responsible for all outlets, including banquets, room service, lobby bar and restaurants.

Now, he admits, after a prestigious career in some of the country's finest restaurants, there is no better place to be working than Boar's Head Inn. Here he has all that is needed for personal and professional satisfaction; bucolic views, an abundance of “authentically local” ingredients for inspired dishes, a world-class Inn and a fabulous staff to pull it all together.

Mark Gaulladet

Executive Chef

Mark Gallaudet, most recently Assistant Executive Chef at the exclusive Ocean Reef Club in Key Largo, Florida, has taken over as the new Executive Chef at Boar's Head Inn's Four-Diamond Old Mill Room Restaurant. Chef Mark oversees the resort's acclaimed Old Mill Room restaurant, three kitchens, the hotel bakery, banquet facilities, and off-premises catering, with a combined staff of 40.

Chef Mark will exercise his Regional American / Continental culinary style and creativity by using fresh and simple ingredients at Boar's Head Inn. He is known for creating dishes that are rich and unique in taste, as well as visually exciting. “I'm looking forward to reaching out to the area farmers and creating dishes that are both seasonally and regionally representative” said Executive Chef Mark Gallaudet.

Chef Mark served in the United State Marine Corps during Operation Desert Storm in the Persian Gulf . He has won many awards including the Quady Wine Dessert competition and a Silver medal at the ACF culinary salon in Los Angeles . Chef Mark is fluent in Spanish and is a member of the American Culinary Federation.

Martin Winters

Director of Golf & Head Professional

Birdwood Golf Course

It seems fitting that Martin Winters, a graduate of the University of Virginia, is Head Professional at Birdwood Golf Course. After all, the course is home to his alma mater's men's and women's golf teams.

After 10 years with Birdwood, Winters sees it as his own home course as well. "Birdwood is a beautiful course," he says. "It is as challenging as a seasoned golfer could want it to be, yet still offers opportunities for new golfers to learn and grow. There is always more to discover here."

An enthusiastic and gifted teacher, Winters offers innovative programs with names such as Introduction to Golf 101, Intermediate Golf 201 and Graduate School, a nod to University life.

Martin also established the popular Boar's Head Women's Golf Academy. Now in its seventh year, the program welcomes beginning and intermediate golfers to learn with LPGA professional and U.Va. women's golf coach Jan Mann and other pros.

As a PGA professional himself, Winters was especially pleased to host both U.S. Open and Canadian Tour qualifiers, the Middle Atlantic PGA Southern Chapter Championship, and several Virginia State Golf Association championships. "We've had some impressive tournaments," he says,"and some impressive players as well."

James Neiderer

Manager of Boar's Head Inn Sports Club

Neiderer comes to Charlottesville from San Francisco , where he worked as the General Manager of the esteemed San Francisco Tennis Club. While there, Neiderer managed all club operations for the ClubCorp facility, which boasted more than $5.5 million in gross revenue under his leadership. Neiderer directed all sales and marketing operations for the club as well as heading up all human resource initiatives.

Prior to this experience, Neiderer served as membership director for SFTC as well as the ClubCorp-owned Crow Canyon Country Club. He also boasts an extensive marketing and public relations background thanks to his seven years of international account leadership experience in a variety of fields including tourism and technology.

Manilla is Boar's Head Sports Club's Director of Racquet Sports and Head Professional. A past president of the Professional Tennis Registry-Mid-Atlantic and the Charlottesville Tennis Patrons Association, Manilla has received recognition from both organizations for his outstanding contributions to tennis. He is a member of the Dunlop/Adidas Advisory Staff.

Manilla has been coaching and teaching tennis since 1973. Sharing his love of the game comes naturally, he says, and that's why he continues to be active in the community by serving as director of the Get Acquainted Tennis Club.
